The process is monitored daily and it is done in a natural way , just by opening and closing the windows when necessary then the grapes are de-stemed, pressed and putt in temperature controlled tanks together with the must where they macerate for more than 20 days.

Filtration: partial, to allow for a more complete expression of the wine's sensory profile. any natural sediments in the wine are further proof of its genuineness.

AT THE TABLE:

Tasting notes: deep red vine with garnet nuances on the nose, intense scents of ripe fruit and jam. delicate floral notes pansy, tertiary notes tobacco, cacao, cinnamon. Very elegant on the palate thanks to the balance between structure and softness. Complex finish with clear notes of alcohol soaked fruit as cherries, blackberries, raspberries and intense balmy scents.

Food Pairings: it matches very well with tasty dishes, red meeat and Seasoned cheese, it goes very well withdark chocolate too. Furthermore Cerasum is also good as a meditative wine.
