Our unrelenting pursuit to find the ultimate expression of the terroir is combined with precision micro-parcel techniques, biodynamics and agroecology. In this small section of the vineyard, carpeted with Achillea flowers, the purest essence of Paraje Altamira is revealed. For this wine, we selected grapes from the plot containing the highest proportion of rock with a high calcium carbonate content. We carried out cold maceration with 10% whole bunches and spontaneous fermentation. The wine was then aged for 20 months in French oak foudres.
