ABOUT THE WINE
Old vines in the pergola system, from Junín Mendoza district. Blend of white criollas grapes, native of the region. Manual Harvest, grapes pressing, spontaneous fermentation in the tank and final into the bottle. Production method: Pet Nat or Pétillant Naturel, means “naturally sparkling”: a production method that was born by accident in France in the 16th century. This ancient method results in a sparkling wine through a single fermentation, unlike the traditional or Champenoise method in which two fermentations occur. “It is characterized by having a production process without additives, only accompanying the gradual transformation of sugar into alcohol. As its fermentation ends in the same bottle, which is then marketed, it is not filtered, so it presents a “mist” that is part of its natural expression and well characteristic of this method.”
